Fragrant Dill & Parmesan Focaccia Bread

Lowest Maintenance Bread Recipe EVER - No kneading required! Revel in the wondrous aromas of Parmesan and Dill and let the bouquet of charred garlic sweep you off your feet. Definitely one of my favourite recipes to date.


Tip: Start this recipe at night just before you head to bed and wake up to perfectly risen bread dough. Let the yeast work while you sleep!




Prep Time: 15 mins | Baking Time: 15 - 20 min | Makes 2 Focaccia Loaves

Ingredients


(Focaccia Dough)

  • 4 Cups Self-Raising Flour

  • 2 1/4 Tsp Instant Yeast

  • 2 Tsp Salt

  • 2 Cups Warm Water (slightly warmer than room temperature)

(Topping)

  • 3/4 Cups Dill (approx 30g with the stems), Chopped

  • 8 Tbsp Olive Oil

  • 3 Cloves Garlic, Chopped

  • 1/2 Cup Shredded Parmesan -If you are not a fan of Cheese feel free to leave this out!

  • Ground Black Pepper


Directions


(Focaccia Dough) - Prepare the night before

  1. Combine ingredients for the dough in a mixing bowl and stir well using a pair of Chopsticks or your hands. (The dough should feel moist at this stage)

  2. Seal the bowl with Cling Wrap and refrigerate for 8 - 12 hours.

  3. GET YOUR BEAUTY REST!

Note: After 8 - 12 hours, take your dough out of the refrigerator. You should see that the dough has doubled in size.


(Focaccia Dough) - Actual Day

  1. Prepare two baking trays and put baking paper on the base. Add one Tbsp of Olive Oil onto each tray.

  2. Slice the dough into two and shape both doughs into a ball. Transfer it to the tray and gently coat the doughs with the Olive Oil on the tray.

  3. Seal the pans with Cling Wrap for 2 - 3 hours at room temperature (or until the dough has expanded to fit the pan).

  4. Preheat the oven to 205°C.

  5. Once the dough has filled most of the pan, add another Tablespoon of Olive Oil to each dough and dimple it using your fingers. *See video below*

  6. Mix the Dill with the remaining Olive Oil (4 Tbsp) and Chopped Garlic and drizzle over both doughs. Sprinkle some Ground Black Pepper and Shredded Parmesan over the dough.

  7. Bake for 15 minutes or until Focaccia Bread is a beautiful golden brown. Ready to serve!

Made too much?

Store in an airtight container and keep at room temperature. Should keep well for 3 - 4 days.
