Savour the incredible fragrance of Beer & Cheddar all whilst partaking in the richness and silkiness of potatoes and cream in this super satisfying dish. The perfect side dish for potluck parties!
Preparation Time: 10 mins | Cooking Time: 25 min | Serves 4 - 5 pax
Ingredients
(Mashed Potatoes)
1 Heaped Tsp Salt
1kg Potatoes, Peeled and cut into small cubes
120g Sour Cream
2 Tbsp Chives, Chopped
(Cheese Mixture)
1 Tbsp Butter
1 Tbsp Plain Flour
80ml Beer
80ml Milk
200g Shredded Cheddar, For this recipe I've used Red and White Cheddar
1/4 Tsp Garlic Powder
Pinch of Freshly Ground Black Pepper - to taste
Pinch of Salt - to taste
Directions
(Cheese Mixture) - Tip: Do this while the potatoes are being boiled!
Add butter to a heated saucepan. When it starts to foam, add in flour and whisk till well combined.
While whisking, gradually add in beer and milk and continue to whisk till smooth (approx 2 mins)
Remove from heat and stir in the shredded cheddar, garlic powder, black pepper and a pinch of salt. (You should get a stretchy cheese mixture).
Set aside.
(Mashed Potatoes)
In a large pot, add in water and salt and bring to a boil. Once boiled, add in cut potatoes and let it cook till soft (approx 16 mins).
Drain the water from the potatoes and transfer the potatoes back to the pot. Mash up the potatoes then pour in the Cheese Mixture and stir.
Add in the Sour Cream and Chives and continue to stir till well combined.
Ready to serve!

Let the mashed potatoes cool down and store in an airtight container before putting it in the fridge. Should keep well for the next 2 -3 days. Remember to reheat them before eating!
