Breakfast Shakshuka

Your favourite breakfast ingredients embalmed in a rich and hearty spicy tomato sauce. Each bite is packed with SO much flavour - the perfect jumpstartto your day! Best served with toast.

Preparation Time: 10 mins | Cooking Time: 25 - 30 mins | Serves 2

Ingredients

  • 2 Tbsp Olive Oil

  • 4 Slices of Streaky Bacon, Diced

  • 2 Mini Sausages/ 1 Large Sausage, Diced

  • 1 Yellow Onion, Diced

  • 1 Can of Diced Tomatoes (approx 400g)

  • 2 Eggs

  • Pinch of Fresh/ Dried Italian Parsley

(Spice Mix)

  • 1/2 Tsp Dried Chili Flakes

  • 1/2 Tsp Salt

  • 1/2 Tsp Ground Black Pepper

  • 1/2 Tsp Dried Oregano

Directions

  1. Add olive oil to a heated cast iron skillet. Then, add in diced bacon and fry till brown and crispy.

  2. Once bacon is ready, add in diced sausage and continue to stir fry. Then, transfer cooked bacon and sausages to a plate and set aside, keeping the oil on the skillet.

  3. Add in the chopped onions with the Spice Mix and stir fry till onions are soft and brown (approx 5 mins)

  4. Then, add in the cooked bacon and sausage as well as the diced tomatoes. Cook on high heat for 10 - 15 mins or until the tomatoes are cooked down and the sauce starts to thicken.

  5. In the meantime, preheat your oven to 220°C.

  6. Use your spatula to create two small wells on top of the Shakshuka Mix and gently pour the eggs in them.

  7. Turn off the heat and pop the skillet into the preheated oven to bake for 8 - 10 mins (or until the eggs are cooked to your preferred doneness)

  8. Once ready, take the skillet out of the oven and sprinkle some Fresh/ Dried Italian Parsley on top of the Shakshuka.

  9. Ready to serve!
