Your favourite Cheeseburger combination fully loaded into a beautiful, golden-brown crust. Absolutely perfect as a mid-day snack!
Note: I've excluded Ketchup from this recipe because my Hubby and I don't really fancy it but you can add it if you like! Add Ketchup, Onions, Bacon... You do you!
Cooking Time: 20 mins | Makes 8 rolls
Ingredients
8 Sheets Spring Roll Pastry (Large) *See Image Above*
2 Tsp Capers or Pickles, Chopped
1 1/2 Cups Cheddar Cheese, Shredded
A small bowl of water
Cooking Oil
(Minced Beef) *Mix together and set aside*
200g Minced Beef
1 1/2 Tbsp Yellow Mustard
1/4 Tsp Tabasco
1/4 Tsp Sugar
1/4 Tsp Ground Black Pepper
Pinch of Salt
(Egg Mixture) *Mix together and set aside*
3 Eggs
1 Tbsp Milk
Pinch of Ground Black Pepper
Pinch of Salt
Directions
Add 1 Tbsp of oil to a frying pan on Medium Heat and stir fry the Minced Beef until it is dry and crumbly and set aside. (Approximately 6 - 7 mins)
Add 1 Tbsp of oil to a frying pan on Medium Heat and pour in the Egg Mixture, scrambling the eggs as you go and set aside.
Take a sheet of spring roll pastry and arrange the shredded cheese, capers, cooked beef and eggs at the bottom half of the sheet. *See guide below*
Roll up the spring roll and use your fingers to lightly brush the ends with some water so that it sticks and the spring roll is nicely sealed.
Add oil to a frying pan (make sure that the base is fully covered with oil) and start to deep-fry the Cheeseburger Egg Rolls till golden brown.
Ready to serve!
