Chewy Dark Chocolate Chip Cookies

Crispy on the outside yet soft and chewy on the inside, these circular parcels of chocolatey goodness are perfect for any occasion!

Tip: Chill your cookie dough before baking! This prevents the cookie from spreading out too quickly in the oven.


Prep Time: 10 mins | Baking Time: 8 - 10 minutes (per tray) | Makes 48 cookies

Ingredients

  • 250g Unsalted Butter, Softened

  • 1 Cup Light Brown Sugar

  • 1/2 Cup Granulated White Sugar

  • 1 Tbsp Vanilla Essence

  • 2 Eggs, Room Temperature

  • 3 Cups Self-Raising Flour, Sifted

  • 1 1/2 Cup Dark Chocolate Couverture or Dark Chocolate, Chopped *See Image Below*

  • 1/2 Cup Sliced Almonds - Optional

  • Salt (For sprinkling over the cookies)

Note: Dark Chocolate Couverture is chocolate with a higher percentage of cocoa butter that gives that beautiful, luscious melty effect in your cookies.


Directions

  1. Measure out all the ingredients. (Set aside some of the Dark Chocolate Pieces and Almonds for decorating the top of your cookies just before baking - Optional)

  2. Whisk together softened butter and both sugars in a large mixing bowl until well combined.

  3. Add in the eggs, vanilla essence and continue to whisk. Then, add in the flour and mix till well combined.

  4. Add in the Dark Chocolate pieces and almonds and stir using a spoon. Chill the Cookie Dough in your refrigerator for 20 - 30 minutes.

  5. In the meantime, preheat your oven to 177°C. Place a sheet of baking paper over a baking pan.

  6. When the cookie dough is ready, take it out of the refrigerator and spoon 1 heaped Tbsp of the dough unto the baking pan. Repeat till pan is full - Be sure to leave some space between each cookie as it will spread out during baking. (Put the dark chocolate pieces and almonds that had been set aside on top of each spoonful of cookie dough)

  7. Bake for 8 - 10 minutes or until cookies are golden brown. (If you like your cookies crispier, bake them for 11-13 minutes!) Sprinkle some salt on each cookie when you take them out of the oven. Ready to serve when cool!
