Ingredients
Crumble Mixture
96g Self-Raising Flour (approx 3/4 cups)
50g Granulated White Sugar
1/4 Tsp Ground Cinnamon
Zest of One Lemon
Pinch of Salt
56g Chilled Unsalted Butter, cut into small cubes
2 Tsp Egg (approx 1/4 of a beaten egg)
1 Tsp Maple Syrup or Vanilla Essence
Berry Mix - Mix together and Set Aside
170g Fresh Blackberries (approx 1 cup)
20g Granulated White Sugar
1 Tsp Cornflour
1 Tbsp Lemon Juice
Directions
(Crumble Mixture)
Blend Flour, Sugar, Cinnamon, Lemon Zest and Salt in a Food Processor till well combined.
Add in chopped butter, egg and maple syrup into food processor and blend until the dough starts to crumble.
Divide the crumble into 2 portions.
(Assembly)
Preheat the oven at 190°C.
Line a small baking pan with baking paper and put half of the crumble mix on the base. Gently use your fingers to press down on the crumble.
Spread out the Berry Mix over the crumble base. Then, sprinkle the rest of the crumble mix on top of the berry mix.
Bake for 25 - 30 mins. (If the top of the crumble starts to brown too quickly, loosely place a sheet of aluminium foil above it)
Let the crumble cool down and slice it into bars. Ready to serve!
