Easy Rosemary Focaccia Bread

Lowest Maintenance Bread Recipe EVER - No kneading required! Crisp on the outside yet immensely soft and fluffy on the inside, this fuss-free bread is loaded with amazing aromas and flavour. Definitely one of my favourite recipes!


Tip: Start this recipe at night just before you head to bed and wake up to perfectly risen bread dough. Let the yeast work while you sleep!

Prep: 15 mins | Rise: 12 (+ 2) hours | Bake: 13 - 15 min | Makes 1 Focaccia Loaf

Ingredients


(Focaccia Dough)

  • 2 Cups Self-Raising Flour

  • 1 1/4 Tsp Instant Yeast

  • 1 Tsp Salt

  • 1 Cup Warm Water (slightly warmer than room temperature)

(Topping)

  • 1/4 Cup Fresh Rosemary Leaves (approx 3 - 4 sprigs)

  • 5 Tbsp Olive Oil

  • 1/4 Tsp Garlic Powder (add more if you love the taste of garlic!)

  • Pinch of Sea Salt

Directions


(Focaccia Dough) - Prepare the night before

  1. Combine ingredients for the dough in a mixing bowl and stir well using a pair of Chopsticks or your hands. (The dough should feel moist at this stage)

  2. Seal the bowl with Cling Wrap and refrigerate for 8 - 12 hours.

  3. GET YOUR BEAUTY REST!

Note: After 8 - 12 hours, take your dough out of the refrigerator. You should see that the dough has doubled in size.


(Focaccia Dough) - Actual Day

  1. Prepare a baking tray and put baking paper on the base. Add one Tbsp of Olive Oil on the baking paper.

  2. Shape the dough into a ball and transfer it to the tray. Gently coat it with the Olive Oil on the tray.

  3. Seal the tray with Cling Wrap for 2 - 3 hours at room temperature (or until the dough has expanded to fit the pan).

  4. Preheat the oven to 205°C.

  5. Once the dough has filled most of the pan, add another Tablespoon of Olive Oil to each dough and dimple it using your fingers. *See video below*

  6. Mix the Rosemary with the remaining Olive Oil (4 Tbsp) and drizzle over the doughs. Sprinkle the garlic powder and a pinch of salt over the dough.

  7. Bake for 13 - 15 minutes or until Focaccia Bread is a beautiful golden brown. Ready to serve!

SECOND RISING OF THE DOUGH (0 HRS vs AFTER 2.5 HRS)

Made too much?

Let the Bread cool down. Store in an airtight container and keep at room temperature. Should keep well for 3 - 4 days.
