Edamame Hu.. What? It works though. Made this recipe with leftover Edamame (Japanese Soybeans) I found at the back of my freezer and other commonly found ingredients in the pantry. An interesting twist to the usual Hummus we all know!
Tip: Feel free to add your favourite herbs into this mix i.e. Dill, Chives, Rockets and serve with freshly toasted tortillas. You do you!
Cooking Time: 5 mins | Makes 1 bowl
Ingredients
1 Cup Edamame (Japanese Soybeans), Shelled
1 Tbsp Olive Oil
1 Tsp Sesame Oil (Optional, although recommended for extra fragrance!)
1 Tbsp Lemon Juice - Feel free to add more if you like your dips more acidic!
1 Tbsp Garlic Powder - If you don't have this, substitute it with 2-3 fresh cloves of Garlic!
1/4 Tsp Salt
1/4 Tsp Black Pepper, Ground
1/3 Cups Water
Directions
Add all the ingredients (excluding water) into a blender or food processor and blend. Scrape the sides of the blender as you go.
Add the water into the blender, 1 tablespoon at a time and blend between each addition. Stop adding water once the mix reaches your desired texture.
Transfer the mix into a bowl and chill.
Drizzle some olive oil and spices on the top and serve!
