Ingredients
4 Slices of Bread
2 Slices of Mozzarella Cheese
2 Slices of Red Cheddar Cheese
1 Tbsp Olive Oil
Rosemary Butter - Mix together and set aside
3 Tbsp Unsalted Butter, Softened (approx 40g)
1 Tbsp Rosemary Leaves (approx 1 sprig)
1 Tsp Garlic Powder
Onion Jam - Makes about 4 Tbsp
1 Yellow Onion, Cut into Strips
1 1/2 Tbsp Balsamic Vinegar
1/2 Tsp Brown Sugar or Granulated White Sugar
Pinch of Salt
1 Tbsp Olive Oil
Directions
(Onion Jam)
In a heated pan, add olive oil and stir-fry onions in it. Add a pinch of salt to the onions and continue frying till they are slightly caramelised and soft. (approx 8 minutes depending on the heat)
Once onions are soft, add in Balsamic Vinegar and Sugar and stir-fry until onions are well-coated and fragrant.
(Assembling the Grilled Cheese)
Spread the Rosemary Butter on each piece of bread (both front and back) and set aside.
On one piece of bread, layer the ingredients in this fashion: Mozzarella Slice, Half of the Onion Jam, Cheddar Slice and cover it with another piece of bread. Then, press down on the sandwich so that it is tightly packed. Repeat for the other grilled cheese.
Add some olive oil to a heated pan and place both prepared sandwiches on it. Using the wooden spatula or the back of a ladle, lightly press down on the sandwich while it is frying.
Once the bottom of the sandwich is crisp and golden brown, flip the sandwich to fry it on the other side.
Transfer the grilled cheese to a plate and it is ready to serve!
