Spicy Peanut Sesame Noodles

The unexpected hero - PEANUT BUTTER. This sauce is to die for! My simplified take on the Taiwanese crowd favourite "Dan Dan Mian" that's ready in less than 10 minutes.

Cooking Time: 10 mins | Serves 1 (large) portion

Ingredients

  • 100g Korean Wheat Noodles

(Spicy Peanut Sesame Sauce) *See Ingredient Images Below*

  • 100g Korean Wheat Noodles (1 serving)

  • 1 Tbsp Peanut Butter

  • 1 Tbsp Spicy Sesame Oil

  • 1 Tbsp Light Soy Sauce

  • 1 Tbsp Apple Cider Vinegar or Chinese Black Vinegar

  • 1/2 Tbsp Green Onion Oil or Vegetable Oil

  • 1/2 Tsp Brown Sugar

(Noodle Toppings) - Optional

  • 1 Tbsp Spring Onion, Chopped

  • 1 Tbsp Toasted Sesame Seeds

  • 3 Ginger Slices, Julienned and Fried

  • 2 Stalks of Leafy Vegetable - For this recipe I've used some leftover Kai Lan.

  • 1 Tbsp Dried Chili Flakes

  • Chili Oil, To Taste - For this recipe I've used the "Lao Gan Ma" Chili Oil but feel free to use your favourite Chili Oil!

Directions

  1. Add all the ingredients for the sauce into a bowl and mix till well combined. Set aside.

  2. Bring a saucepan of water to boil and cook noodles according to the instructions on the packaging. If you are adding the Leafy Veg, cook it together with the noodles at this stage.

  3. Strain the noodles and briefly run through tap water to stop the noodles from cooking and sticking to each other. Transfer the noodles to the bowl with the sauce and mix well.

  4. Add the toppings and it's ready to serve!
